Okroshka with meat and kvass Okroshka is great, we eat it only at summer. It is Cold Soup. 


200 - 300 grams (8 - 12 oz) cold boiled meat
250 grams (10 oz) - fresh cucumber
100 grammas (4 oz) - green onion
2 hard-boiled eggs
5 - 7 chopped radishes
1,5 litres (3 pint) - kvass
50 - 100 grams (2 - 4 oz) sour cream

Chopped green Celery, dill, parsley, salt, sugar to taste.
(I put 1 tsp sugar for 1,5 litres of kvass)


1. Take 300 grams (12 oz) of cold boiled cubed meat, 250 grams (10 oz) of cubed fresh cucumbers and put into big bowl. 

2. Add chopped eggs, green spring onions, radishes and greenery into this mixture. 

3. Pour kvass and add salt, sugar, stir well. The okroshka is ready. You can use almost any kind of boiled meat for okroshka. The proportions can be altered and okroshka gives a lot of scope to inventive cook. 

4. Serve with sour cream.
