Okroshka with beef - Cold Soup.
400 g (14 oz) boiled beef, cold, cubed.
5 fresh cucumber, cubed.
1 cup green onion, chopped.
1 cup green fresh dill, chopped.
3 - 4 hard-boiled eggs, chopped.
1,5 litres (3 pint) - kvass
50 - 100 grams (2 - 4 oz) sour cream
parsley, salt, sugar, grated horseradish to taste.
1. Put all ingredient into bowl.
2. Pour kvass and add salt, sugar, stir well. The okroshka is ready. You can use almost any kind of boiled meat for okroshka. The proportions can be altered and okroshka gives a lot of scope to inventive cook.
3. Serve with horseradish and sour cream.
