Holodnik is great, we eat it only at summer. It is Cold Soup. 


300 grams (12 oz) beet, cooked and peeled
200 grams (8 oz) - fresh cucumbers
100 grammas (4 oz) - green onion
1,5 litres (3 pint) - beet kvass

Chopped green Celery, dill, parsley, salt, sugar, lemon juice to taste.


1. Take boiled cubed beet, cubed fresh cucumbers and put into pot. 

2. Add chopped green spring onions and greenery into this mixture. 

3. Pour beet kvass, add salt, sugar, lemon juice and stir well. The Holodnik is ready. The proportions can be altered and Holodnik gives a lot of scope to inventive cook.
